    Gigi's Hot Crabmeat (or Shrimp) Dip

    List of Ingredients


    • 1/2 cup (1 stick) butter
    • 1 bunch green onions, chopped
    • 1 clove garlic, minced
    • 1/2 cup chopped fresh parsley
    • 2 Tbsp flour
    • 1 pint (2 cups) half-and-half
    • 1/2 lb. good-quality Swiss cheese, grated
    • 2 Tbsp sherry
    • Few dashes Tabasco sauce
    • Salt and white pepper to taste
    • 1 lb. lump fresh crabmeat, rinsed and picked over (or 1 lb. well-seasoned cooked shrimp)


    Instructions


    1. In a large skillet, melt the butter. In it, saute the green onions, garlic and parsley. Add the flour and cook, stirring, about 2 to 3 minutes, being careful not to brown the roux.

    2. Stir in the half-and-half, Swiss cheese, sherry and Tabasco. Season with salt and white pepper. Add the crabmeat (or shrimp) and stir to combine. (A combination of crabmeat and shrimp works well, too.)

      Serve in a chafing dish with assorted cocktail breads, melba toast, and/or crackers.
