"Here's an all-time favorite: Sprinkle bacon slices with sugar—in this case, raw turbinado sugar, but brown sugar works well, too—and then bake until burnished with a glistening glaze. Cut into bite-size morsels, they are the ultimate partner for cocktails."

â—¦ 1 pound thick-cut bacon, room temperature
â—¦ ¼ cup raw turbinado or dark brown sugar (packed)
â—¦ 2 teaspoons fresh thyme leaves
Recipe
Preheat oven to 350° F. Line a rimmed baking sheet with parchment and set a wire rack on top. Lay bacon slices on rack, then sprinkle with sugar, spreading to coat evenly and pressing to adhere. Let rest in a warm spot until sugar begins to dissolve, about 10 minutes.
Bake until bacon is crisp and evenly glazed, flipping slices halfway through, 25 to 35 minutes, sprinkling with thyme during last 5 minutes of baking. Remove from oven; when cool enough to handle, cut bacon crosswise into thirds, and keep in a warm spot until ready to serve.
Makes about 30 pieces
