Gouda Shrimp Puffs

- 1/2 cup vegetable oil
- 1/4 cup butter
- 1/2 cup water
- 3/4 cup plus 2 Tbsp flour
- 3 eggs
- Dash of hot sauce
- 1/4 tsp salt
- Dash of pepper
- 1 cup shredded Gouda cheese
- 1 Tbsp chopped chives
- 1 (4-1/2-ounce) can shrimp, drained and chopped
Instructions
- Heat vegetable oil to 350 degrees (F) in an electric skillet.
- Melt the butter in a medium saucepan. Add water and bring to a boil. Add flour, stirring until mixture leaves sides of pan. Remove from heat. Add eggs, one at a time, beating well at medium speed with an electric mixer after each addition. Stir in salt, pepper, hot sauce, Gouda cheese, chives and shrimp.
- Drop mixture by teaspoonfuls into the hot skillet. Fry about 5 minutes or until golden brown, turning once. Drain on paper towels. (May be kept warm in a 200-degree oven for about 1 hour before serving.)
Makes 3 dozen.
