Green Chile Won Tons

List of Ingredients
- -- Guacamole Dip --
- 2 large, ripe avocados
- 3 Tbsp fresh lime juice
- 1/2 tsp salt
- 1/2 tsp ground coriander
- 2 tsp minced green onion
- 3 Tbsp mayonnaise

- -- Green Chile Won Tons --
- 1/2 lb. Monterey Jack cheese, grated
- 1 (4-ounce) can green chiles, chopped
- 1 pkg. won ton skins
- Oil for frying
Instructions
- For the Guacamole Dip: Mash pulp of avocado and blend in lime juice. Add remaining ingredients and blend until smooth. Cover and refrigerate until used.
- For the Green Chile Won Tons: Mix cheese and green chiles. Place 1 teaspoon of the mixture on a won ton skin and fold like an envelope.
- Fry won tons in 2 inches of hot oil until brown, turning so that both sides will be brown. Drain.
Serve won tons hot with guacamole dip.
Makes 30 won tons.
