Preheat the oven to 350° F. Lay the bacon on wire racks over rimmed sheet pans and bake for 10 to 15 minutes, until the bacon has rendered some fat and is starting to color on the edges.
Remove the bacon from the oven and pour the rendered fat through a sieve and save for another use.
Apply a thick coating of the honey mustard glaze to one side of each slice of bacon and return the baking sheet to the oven for 5 minutes. Remove from the oven, apply a second coating of glaze to each slice of bacon, and bake for an additional 5 minutes. Let rest for 30 minutes or serve immediately.

Honey Mustard Glaze:
"There is nothing fancy here, just a good honey mustard sauce that gets its kick from cayenne and black pepper. Use it in the honey mustard bacon or slathered on a BLT, the Bacon Bratwurst Burger, or just a simple ham sandwich."

â—¦ ¾ cup Dijon mustard
â—¦ 1 teaspoon freshly ground black pepper
â—¦ ½ teaspoon garlic powder
â—¦ ¼ teaspoon ground cayenne
In a medium bowl, whisk together the honey, mustard, black pepper, garlic powder, and cayenne. Cover and let sit at room temperature for at least 30 minutes before using to allow the flavors to meld.
The glaze will keep tightly covered in the refrigerator for up to 2 days.
