    Hot Pimento Cheese Dip

    Recipe Introduction

    "My mother's and grandmother's recipe for pimento cheese is the one we serve and sell at Gabriel's by the sandwich and by the pound, day in and day out. Our customers love it! I really wanted a warm appetizer using our pimento cheese, and here's the result. This is especially good with pita chips."

    List of Ingredients

    â—¦ ¾ cup mayonnaise
    â—¦ 1 teaspoon sugar
    â—¦ 2 cups (8 ounces) shredded mild cheddar cheese
    â—¦ 1 (2-ounce) jar diced pimentos, well drained
    â—¦ 6 to 8 slices bacon, cooked crisp and chopped
    â—¦ 1 to 2 Roma tomatoes, peeled and chopped
    â—¦ Pita chips for serving

    Recipe

    In a medium bowl whisk the mayonnaise and the sugar. Add the cheese and the pimento, combining well.

    Preheat the oven broiler on low setting. Spread the desired amount of pimento cheese ½ to ¾ inch deep onto an ovenproof serving plate. Sprinkle chopped bacon and tomato to taste over the top of the pimento cheese and place under the broiler until the mixture is hot and beginning to bubble.

    Serve hot with pita chips.

    Makes 2 to 2 ½ cups



    • Note:
    Grate your own cheese; pre-shredded cheese will change the taste and consistency.
