Lemon Basil Bruschetta

Recipe Introduction
"There's nothing better than a little crunchy baguette square topped with salty goodness to start off a meal. Whenever I'm out to dinner, I always go for the bruschetta as an appetizer because it gives me the satisfaction of a little bit of bread with yummy toppings, and keeps me from eating the whole bread basket before the meal comes! I've taken this idea and come up with these crunchy, tomato-topped bites that keep my guests happy and satisfied while I'm finishing up supper."
List of Ingredients
◦ 2 cups mixed-color grape tomatoes, quartered
◦ cup finely chopped orange bell pepper
◦ 1 tablespoon finely chopped fresh basil
◦ clove garlic, finely grated
◦ teaspoon Old Bay seasoning
◦ 2 tablespoons olive oil
◦ teaspoon kosher salt
◦ Freshly ground black pepper
◦ 1 lemon
◦ 1 baguette, sliced and lightly toasted, for serving
Recipe
In a medium bowl, gently toss the tomatoes, bell pepper, basil, garlic, Old Bay, olive oil, salt, and a few grinds of black pepper. Zest 1 teaspoon of lemon zest over the bowl so some of those awesome lemon oils spray in as you zest, and stir to combine.
Serve with toasted baguette slices.
Serves 4 to 6

Change the bruschetta up by using your favorite fresh herbs.
Try it with any kind of fresh basil, oregano, or summer savory.
