    Lobster Melts

    List of Ingredients


    • 2 cups lobster meat (from 2 cooked tails)
    • 1 (8-ounce) pkg. cream cheese, softened
    • 1/2 tsp dill
    • 36 slices party pumpernickel bread, or Italian roll slices
    • 36 slices Swiss cheese, cut into 2-inch squares
    • Green olives, sliced
    • Black olives, sliced
    • Cherry tomatoes, sliced


    Instructions


    1. Remove lobster meat from tails and flake. Stir meat, cream cheese, and dill together with a rubber spatula until blended. Spread mixture onto the party breads and top with cheese squares.

    2. Bake at 450 degrees for 5 to 7 minutes or until cheese melts. Garnish each with olives and tomato slice. Serve immediately.

      Makes 36 appetizers.
