    Margarita Wings

    List of Ingredients


    • 2-1/2 pounds pre-cut chicken wings (or whole wings cut into 2 pieces at joint, tips discarded)
    • 1/2 cup gold tequila or mescal
    • 1/4 cup frozen orange juice concentrate
    • Grated zest of 1 lemon
    • Juice of 1 lemon
    • 2 cloves garlic, minced
    • 1/2 tsp ground cumin
    • 1 tsp freshly ground coarse black pepper
    • 1 tsp salt
    • 2 Tbsp minced cilantro


    Instructions


    1. Wash the wings, pat them dry, and place them in a large, heavy-duty resealable plastic food bag. In small bowl, combine remaining ingredients and pour marinade over wings. Seal bag and refrigerate wings several hours or overnight.

    2. Prepare medium-hot charcoal fire or preheat gas grill to medium-high.

    3. Drain wings, discarding marinade. Grill wings, turning often, until slightly charred and cooked through, about 25 minutes.

      Makes 4 servings.
