    Marinated Mushrooms

    From "The Good Home Cookbook" by Richard Perry

    List of Ingredients


    • ¾ cup olive oil
    • â…“ cup red wine vinegar
    • 1 ½ teaspoons salt
    • ¾ teaspoon sugar
    • 1 teaspoon minced garlic
    • 2 bay leaves
    • 1 ½ pounds button mushrooms, trimmed
    • 2 tablespoons chopped fresh parsley
    • 1 teaspoon dried basil


    Instructions


    1. Combine the oil, vinegar, salt, sugar, garlic, and bay leaves in a medium saucepan over high heat and bring to a boil.

    2. Add the mushrooms, parsley, and basil; reduce the heat and simmer until the mushrooms are tender, 3 to 5 minutes.

    3. Pour the mushrooms and their marinade into a glass or earthenware container and refrigerate overnight or up to 3 days. Bring to room temperature before serving.

      Makes about 3 cups
