    Marinated Shrimp

    From "The All New Ultimate Southern Living Cookbook"

    List of Ingredients


    • 2 pounds unpeeled, large fresh shrimp
    • 6 cups water
    • 2 teaspoons salt
    • ½ cup sugar
    • 1½ cups white vinegar
    • 1 cup vegetable oil
    • ¼ cup capers, undrained
    • 1 teaspoon salt
    • 1½ teaspoons celery salt
    • 1 medium-size red onion, sliced and separated into rings


    Instructions


    1. Peel shrimp, and devein, if desired.

    2. Bring water and 2 teaspoons salt to a boil; add shrimp, and cook 2 minutes or just until shrimp turn pink. Drain; rinse with cold water. Chill.

    3. Whisk together sugar and next five ingredients in a large shallow dish; add shrimp alternately with onion. Cover and chill 1 hour to 6 hours, turning often. Drain and discard marinade before serving.

      Makes 10 appetizer servings
