Marinated Tortellini

List of Ingredients
- 1 (9-ounce) pkg. fresh cheese tortellini
- 1/3 cup vegetable oil
- 2 Tbsp white wine vinegar
- 1 Tbsp water
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1 clove garlic, crushed
- 1 Tbsp chopped Italian parsley
Instructions
- Cook tortellini according to package directions; drain. Rinse with cold water; drain.
- Whisk together vegetable oil and next 5 ingredients. Pour over tortellini; toss gently. Sprinkle with chopped parsley. Cover and chill.
Serve as part of antipasto platter (see recipe for Easy Antipasto, in Appetizers category).
Makes 12 appetizer servings.
