    Mediterranean Layered Dip

    Recipe Introduction

    "This dip disappears really quickly! I like to assemble it in a wide, shallow bowl or on a platter so that there is lots of surface area to successfully load up your dipper of choice. Just layer two flavor-packed store-bought ingredientshummus and tzatzikithen top them with a Mediterranean mix of roasted red peppers, olives, feta, and cucumbers. Serve with pita chips or sliced vegetables (carrots and bell peppers travel especially well)."

    List of Ingredients

    ◦ 2 cups hummus
    ◦ 2 cups tzatziki
    ◦ English cucumber, cut into -inch pieces
    ◦ cup jarred roasted red peppers, patted dry and chopped
    ◦ ⅓ cup pitted kalamata olives, chopped
    ◦ 3 tablespoons extra-virgin olive oil, plus extra for drizzling
    ◦ 1 tablespoon red wine vinegar
    ◦ teaspoon table salt
    ◦ teaspoon pepper
    ◦ 2 ounces feta cheese, crumbled ( cup)

    Recipe

    Spread hummus in single layer on large, shallow serving platter, then gently spread tzatziki evenly over top. Combine cucumber, red peppers, olives, oil, vinegar, salt, and pepper in bowl. Spoon vegetable mixture in even layer over tzatziki. Sprinkle with feta and drizzle with extra oil. Serve immediately.

    Serves 6 to 8







    ❧ Notes:

    12-ounce containers of both hummus and tzatziki provide enough for this recipe. I go for store-bought for the greatest ease, but feel free to use your favorite homemade versions instead.

    I don't recommend making this ahead of time, so remember that you'll need to pack the ingredients for this dip to assemble it when you're ready to eat.
