Source of Recipe
From "The All-American Cowboy Cookbook"
List of Ingredients
- 1 lb. shrimp, peeled and deveined
- 1 stick butter or margarine
- 1 white onion, chopped
- Salt to taste
- Pepper to taste
- Tony Chasre's Cajun seasoning or red pepper and paprika, to taste
- 1 loaf French bread
- 1 cup shredded Cheddar cheese
Instructions
- Cut the shrimp into 1/2-inch pieces. Saute in butter with onion and seasonings over medium heat for about 5 minutes.
- Preheat the oven to 350 degrees (F). Cut French bread loaf in half lengthwise. Take the top half and scrape out the center of it, so it looks like a boat. Take the crumbs and spread them on a cookie sheet. Toast the crumbs and the hollow loaf until brown.
- Combine crumbs with sauteed shrimp mixture. Mix thoroughly. Stuff mixture into hollowed half of loaf and spread cheese over the top. Bake with bottom half of bread for 3 to 5 minutes or until cheese is melted.
Serve open-faced or top with other half of bread and cut into slices, along with a green salad.
