    Holdin' Heaven Shrimp Bread

    Source of Recipe

    From "The All-American Cowboy Cookbook"

    List of Ingredients

    • 1 lb. shrimp, peeled and deveined
    • 1 stick butter or margarine
    • 1 white onion, chopped
    • Salt to taste
    • Pepper to taste
    • Tony Chasre's Cajun seasoning or red pepper and paprika, to taste
    • 1 loaf French bread
    • 1 cup shredded Cheddar cheese

    Instructions

    1. Cut the shrimp into 1/2-inch pieces. Saute in butter with onion and seasonings over medium heat for about 5 minutes.

    2. Preheat the oven to 350 degrees (F). Cut French bread loaf in half lengthwise. Take the top half and scrape out the center of it, so it looks like a boat. Take the crumbs and spread them on a cookie sheet. Toast the crumbs and the hollow loaf until brown.

    3. Combine crumbs with sauteed shrimp mixture. Mix thoroughly. Stuff mixture into hollowed half of loaf and spread cheese over the top. Bake with bottom half of bread for 3 to 5 minutes or until cheese is melted.

Serve open-faced or top with other half of bread and cut into slices, along with a green salad.
