Mushroom Filo Appetizer

List of Ingredients
- 1 diced onion
- 1 tsp olive oil
- 1 Tbsp diced shallots
- 1 Tbsp minced garlic
- 8 ounces Cremini mushrooms
- 8 ounces golden (Chanterelle) mushrooms
- 8 ounces Shiitake mushrooms
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
- 1 Tbsp rosemary
- 2 Tbsp parsley
- 2 Tbsp Madeira wine
- 2 cups grated smoked Gouda cheese
- 1/4 cup grated Parmesan cheese
- Melted butter
- 1 pkg. Filo pastry sheets
Instructions
- Saute onion in olive oil. Add shallots and garlic. Cook until light brown. Add Cremini mushrooms. Cook 2 minutes. Add golden mushrooms. Cook 2 minutes. Add Shiitake mushrooms. Cook 2 minutes. Add salt and pepper. Add thyme, rosemary and parsley. Add Madeira and reduce. Remove from heat.
- Add cheese after mushrooms cool. Brush butter over a Filo sheet. Place 1 to 2 tablespoons of mushroom mixture on a Filo sheet and fold over.
- Bake on a cookie sheet at 350 degrees (F) for 10 to 15 minutes, until light brown.
Makes 12 to 20 appetizers.
