    My Favorite Layered Mexican Dip

    List of Ingredients

    â—¦  8 ounces sour cream
    â—¦  One 1 ½-ounce package taco seasoning mix
    â—¦  3 avocados
    â—¦  1 teaspoon Cajun seasoning mix (such as Tony Chachere's)
    â—¦  2 teaspoons fresh lime juice
    â—¦  1 large clove garlic, minced
    â—¦  One 1-pound can refried beans
    â—¦  One 4-ounce can chopped green chiles, drained
    â—¦  One 4 ½-ounce can chopped ripe olives, drained
    â—¦  1 bunch green onions, thinly sliced
    â—¦  1 cup salsa, homemade or purchased
    â—¦  8 ounces Monterey Jack cheese, grated

    Recipe

    In a small bowl, mix the sour cream with the taco seasoning mix. Peel and chop the avocados and in a medium bowl, combine them with the Cajun seasoning, lime juice, and garlic.

    In a 12 x 8 x 2-inch dish, place the following layers, in this order: refried beans, avocado mixture, sour cream mixture, green chiles, olives, green onions, salsa, and grated cheese.

    Serve the dip with the corn chips of your choice. Dig in and enjoy! We often make a meal of it.
    And don't forge the cerveza!
