    Nacho's Nachos

    List of Ingredients


    • 4 to 5 ounces corn tortilla chips
    • 1 to 1-1/2 cups refried beans
    • 6 to 8 ounces shredded Cheddar (1-1/2 to 2 cups)
    • 2 to 3 pickled jalapenos, sliced


    Instructions


    1. Preheat the oven to 475 degrees or preheat the broiler, with the rack positioned about 7 inches from the top of the oven or the heat source.

    2. Assemble the nachos: For thin chips, use less of each topping; for thick chips, use more. Smear each tortilla chip with a dab of beans and arrange in a single layer on a 12x18-inch baking sheet or ovenproof platter. Sprinkle the cheese evenly over the top. Place a jalapeno slice on each chip.

    3. Bake the nachos for 4 to 6 minutes, or broil, until the cheese is melted and bubbly.

      Makes one 12x18-inch tray or equivalent.
