Spiced Olives

List of Ingredients
- 1-1/2 cups good-quality olives*
- 1 Tbsp extra-virgin olive oil
- 6 whole cloves garlic, lightly mashed and peeled
- Two 1x3-inch strips orange zest
- Two 1x3-inch strips lemon zest
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
- 1 tsp lemon juice
Instructions
- Rinse the olives briefly and put into a bowl. Mix together the olive oil, garlic, orange and lemon zests, cumin, coriander seeds and lemon juice. Pour over the olives, stirring to coat evenly.
- Cover tightly. Refrigerate about 5 days, or until the olives have absorbed the flavors of the other ingredients. Stir occasionally during the marination time.
Makes about 2 cups.
* Olives such as Kalamata or Gaeta can be used in this recipe.
