Pears and Camembert

List of Ingredients
â—¦ 1 8-ounce wheel Camembert or Brie cheese, chilled
â—¦ 1 tablespoon unsalted butter
â—¦ 1 large Bosc pear, peeled and cut into ¼-inch dice
â—¦ 2 tablespoons brandy
â—¦ 1 teaspoon chopped fresh rosemary, plus more for garnish
â—¦ 2 tablespoons balsamic vinegar
â—¦ 1 tablespoon honey
â—¦ 8 walnut halves
Recipe
Slice the cheese wheel in half crosswise; set aside. In a medium skillet over medium heat, melt the butter. Add the diced pear, and cook until tender, about 3 minutes. Stir in the brandy, and cook 1 minute more. Add the rosemary, and stir to combine. Remove from the heat, and spread over the bottom half of the reserved sliced cheese wheel, reserving 2 tablespoons of the mixture. Transfer the cheese to a serving plate.
Return the skillet to the stove, and heat the balsamic vinegar and honey until simmering. Simmer the mixture until slightly thickened, about 3 minutes. Set aside to cool, about 5 minutes. Pour half the glaze over the cheese and pear mixture; top with the remaining half of the cheese wheel and the reserved pears. Drizzle with the remaining glaze, and garnish with the walnut halves and rosemary. Serve immediately.
