Pecan-Crusted Fried Brie Bites

- 2 large eggs, beaten
- 2/3 cup finely chopped pecans
- 1/3 cup panko (Japanese bread crumbs)
- 2 (7.7-ounce) Brie rounds, well chilled
- Vegetable oil, for frying
- Honey
Instructions
- In a shallow bowl, add eggs. In a shallow plate, combine nuts and bread crumbs. Slice cheese into 8 equal wedges. Dip each wedge into egg, turning to coat. Dip each wedge into crumb mixture, pressing mixture to adhere.
- In a large skillet over medium heat, add oil to a depth of 1½ inches; heat to 350° F.
- Fry wedges, a few at at a time in hot oil, turning quickly to cook until golden on all sides, about 1 minute. Drain on paper towels. Serve immediately with honey.
Makes 16 servings.
