    Quesadillas

    List of Ingredients


    • 6 ounces Monterey Jack cheese
    • 1 (4-ounce) can green chile peppers, rinsed and seeded
    • 3/4 cup refried beans
    • 12 (6-inch) flour tortillas
    • 2 Tbsp cooking oil


    Instructions


    1. Cut cheese into twelve (3 x 1 x 1/4-inch) strips. Quarter chile peppers lengthwise.

    2. Spread 1 tablespoon of the beans on each tortilla. Top each with a piece of cheese and a chile pepper. Fold tortillas in half, secure each with a wooden pick.

    3. In skillet, heat oil. Cook quesadillas, a few at a time, in the hot oil for about 2 minutes per side or until lightly browned and cheese is melted.

      Makes 12 quesadillas.
