    Quesadillas with Cheese & Chili

    Adapted from "Williams-Sonoma: Cooking for Yourself"


    List of Ingredients


    • 2 flour tortillas, about 8 inches in diameter
    • 2/3 cup shredded Mexican-style four-cheese mix
    • 2 Tbsp canned chopped green chilies
    • Optional: 1 green onion, finely chopped


    Instructions


    1. Heat oven to 400 degrees (F).

    2. Place the tortillas on a baking sheet and toast 5 minutes. Turn over and bake an additional 5 minutes.

    3. Spread the cheese on top of 1 tortilla, leaving about 1/2-inch around the edge. Sprinkle the chilies and green onion on top. Top with second tortilla, pressing lightly. Bake 8 minutes on center oven rack, or until cheese has melted. Cool a few minutes before cutting into wedges.

      Makes 1 serving.
