    Red Pepper Cheddar Dip

    List of Ingredients


    • ¾ cup shredded sharp white Cheddar
    • 4 ounces cream cheese, softened
    • ¼ cup plain yogurt or sour cream
    • ¼ cup mayonnaise
    • ¼ cup diced bottled roasted red peppers
    • 2 tsp Tabasco
    • Salt to taste
    • 2 strips thick-sliced bacon, diced
    • ½ cup sliced scallions
    • .
    • Bagel chips, breadsticks, or sliced cucumbers


    Instructions


    1. Blend all ingredients except bacon and scallions in a food processor until fairly smooth.

    2. Sauté bacon in a skillet over medium-high heat until crisp; drain on a paper towel-lined plate. Reserve some bacon and scallions for garnish, then fold remainder into cheese mixture. Transfer to a serving dish and chill at least 1 hour.

    3. Garnish with reserved bacon and scallions. Serve with bagel chips, breadsticks, or cucumbers.

      Makes about 2 cups.
