Red Pepper Cheddar Dip

- ¾ cup shredded sharp white Cheddar
- 4 ounces cream cheese, softened
- ¼ cup plain yogurt or sour cream
- ¼ cup mayonnaise
- ¼ cup diced bottled roasted red peppers
- 2 tsp Tabasco
- Salt to taste
- 2 strips thick-sliced bacon, diced
- ½ cup sliced scallions
- .
- Bagel chips, breadsticks, or sliced cucumbers
Instructions
- Blend all ingredients except bacon and scallions in a food processor until fairly smooth.
- Sauté bacon in a skillet over medium-high heat until crisp; drain on a paper towel-lined plate. Reserve some bacon and scallions for garnish, then fold remainder into cheese mixture. Transfer to a serving dish and chill at least 1 hour.
- Garnish with reserved bacon and scallions. Serve with bagel chips, breadsticks, or cucumbers.
Makes about 2 cups.
