    Salmon-Cucumber Tea Sandwiches

    Recipe Introduction

    "Tea sandwiches are lovely because they can be made ahead of time. This combination of smoked salmon and cucumber is heavenly. I have never met someone who would turn down a tea sandwich. After all, they are so small and dainty, most people think they are void of calories altogether."

    List of Ingredients

    â—¦ 1 (8-ounce) package cream cheese, softened
    â—¦ 3 tablespoons fresh lemon juice (from 1 lemon)
    â—¦ 3 teaspoons grated white onion
    â—¦ ½ teaspoon kosher salt
    â—¦ 16 thin sandwich bread slices
    â—¦ 1 medium English cucumber
    â—¦ 4 ounces sliced smoked salmon
    â—¦ Fresh dill

    Recipe

    Stir together the cream cheese, lemon juice, onion, and salt until well blended. Spread about 1 tablespoon onto each bread slice.

    Cut the cucumber into thin rounds. Cut the rounds into half-moons. Divide the cucumbers and smoked salmon among the prepared bread slices. Gently press to adhere. Sprinkle with the fresh dill to taste.

    Cover with plastic wrap, and chill 15 minutes to 12 hours. Trim the crusts from the chilled slices, and cut each slice into two triangles. Serve open-face or sandwich the triangles together, as desired.

    Serves 8
