    Sammy Hagar's Wabo Shrimp

    Sammy Hagar (of Cabo Wabo in Cabo San Lucas, Mexico)


    List of Ingredients


    • 24 large shrimp, peeled
    • Juice from 3 limes
    • 3 shots of Cabo Wabo tequila
    • 2 cloves garlic, finely chopped
    • 2 jalapenos, chopped
    • 1/4 cup chopped cilantro
    • Salt and pepper
    • 2 Tbsp peanut oil


    Instructions


    1. Mix together all of the above ingredients, except the peanut oil. Allow to marinate in the refrigerator for 30 minutes.

    2. Heat the oil in a skillet or wok. Strain the shrimp, reserving the marinade. Throw the shrimp in the hot pan. Zap them fast! Flip them around.

    3. Add the marinade and let half of the liquid evaporate. Serve over rice.

      Serves 4
