Sammy Hagar's Wabo Shrimp

Sammy Hagar (of Cabo Wabo in Cabo San Lucas, Mexico)
List of Ingredients
- 24 large shrimp, peeled
- Juice from 3 limes
- 3 shots of Cabo Wabo tequila
- 2 cloves garlic, finely chopped
- 2 jalapenos, chopped
- 1/4 cup chopped cilantro
- Salt and pepper
- 2 Tbsp peanut oil
Instructions
- Mix together all of the above ingredients, except the peanut oil. Allow to marinate in the refrigerator for 30 minutes.
- Heat the oil in a skillet or wok. Strain the shrimp, reserving the marinade. Throw the shrimp in the hot pan. Zap them fast! Flip them around.
- Add the marinade and let half of the liquid evaporate. Serve over rice.
