"Prepare the day before" is music to an overwhelmed hostess' ears. Recipes that can be made the day before are the hallmark of a successful party. Trust me, on the day of the party you have furniture to dust, monogrammed towels to put out, and husbands to yell at.
List of Ingredients
â—¦ 1â…“ cups extra-virgin olive oil
â—¦ â…” cup tarragon vinegar
â—¦ ¾ cup fresh lemon juice (from 2 lemons)
â—¦ 2 teaspoons kosher salt
â—¦ ½ teaspoon black pepper
â—¦ 3 quarts water
â—¦ 2 pounds large peeled, deveined raw shrimp
â—¦ 1 lemon, very thinly sliced
â—¦ 1 small yellow onion, very thinly sliced (about 1½ cups sliced)
â—¦ Wooden picks
Recipe
Whisk together the oil, vinegar, lemon juice, salt, and pepper in a large bowl until combined; set aside.
Bring 3 quarts water to a boil in a large saucepan over high. Add the shrimp; cook until almost done, about 3 minutes. Drain the shrimp, and add immediately to the oil mixture. Add the sliced lemon and onion; toss to coat.
Cover and refrigerate 8 hours or overnight.
Serve the shrimp in the marinade with wooden picks.
