    Sesame-White Bean Dip

    List of Ingredients


    • 1 (19-ounce) can white kidney or cannellini beans, drained and rinsed
    • 1/4 cup tahini (sesame paste)
    • 3 Tbsp fresh lemon juice
    • 1/4 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1/4 cup olive oil
    • 1/4 cup chopped green onions
    • 1 Tbsp sesame seeds, toasted
    • .
    • Garlic Pita Chips (see separate recipe under Snacks)
    • Assorted fresh vegetables


    Instructions


    1. Combine beans, tahini, lemon juice, salt and pepper in a food processor. With machine on, add oil through feed tube in a steady stream and process 30 seconds, until smooth.

    2. Transfer to a serving bowl and stir in green onions. (Can be made ahead. Cover and refrigerate up to 24 hours.) Sprinkle with sesame seeds.

      Serve with Garlic Pita Chips and assorted vegetables, if desired.

      Makes 2 cups.
