    Mexican Shrimp

    List of Ingredients


    • -- Marinade --
    • 1 cup olive oil
    • 1/2 cup red wine vinegar
    • 5 Roma tomatoes, chopped
    • 1 bunch cilantro, chopped
    • 1 bunch green onions, chopped
    • 1 Tbsp chopped garlic
    • 1/8 tsp pepper flakes
    • 1 fresh jalapeno, seeds removed and finely diced
    • .
    • 3 lbs. shrimp, cooked with tail on


    Instructions


    1. In a large bowl, mix marinade ingredients. Add shrimp and marinate, covered, in refrigerator for 8 to 12 hours.
