- 1 cup olive oil
- 1/2 cup red wine vinegar
- 5 Roma tomatoes, chopped
- 1 bunch cilantro, chopped
- 1 bunch green onions, chopped
- 1 Tbsp chopped garlic
- 1/8 tsp pepper flakes
- 1 fresh jalapeno, seeds removed and finely diced

- 3 lbs. shrimp, cooked with tail on
Instructions
- In a large bowl, mix marinade ingredients. Add shrimp and marinate, covered, in refrigerator for 8 to 12 hours.
