    Shrimp Bruschetta

    List of Ingredients


    • 1 (12-ounce) French baguette
    • 1 pound fresh medium shrimp, cooked and finely chopped
    • 2 tsp Old Bay seasoning
    • ¼ tsp garlic powder
    • 1 plum tomato, seeded and finely chopped
    • 2 Tbsp finely chopped green onion
    • 2 tsp olive oil
    • 1 egg white
    • 3 to 4 Tbsp mayonnaise


    Instructions


    1. Preheat broiler.
      Cut baguette into 24 (½-inch-thick) slices. Place on a baking sheet, and broil until lightly toasted, 4 to 5 minutes per side. Let cool.

    2. Preheat oven to 350° F.
      In a medium bowl, combine shrimp, Old Bay seasoning, garlic powder, tomato, green onion, olive oil, and egg white, mixing until blended.

    3. Spread each slice thinly with mayonnaise, and then spoon shrimp mixture evenly over bread slices. Bake until heated through and lightly browned, 10 to 12 minutes.

      Makes 24 servings.
