    Shrimp Martini Cocktail Appetizer

    From "2010 Christmas with Southern Living"

    List of Ingredients


    • ½ pound medium shrimp, peeled
    • 1 to 2 Tbsp dry vermouth (optional)
    • 1 Tbsp chopped fresh cilantro
    • 1 Tbsp fresh lemon juice
    • ¼ tsp salt
    • 2 plum tomatoes, seeded and chopped
    • 8 pimiento-stuffed Spanish olives, coarsely chopped
    • 1 small jalapeño pepper, seeded and minced
    • 1 large clove garlic, minced
    • Garnishes: Lemon zest curls, skewered olives


    Instructions


    1. Cook shrimp in boiling water 1 minute, or just until shrimp turn pink. Drain and plunge into ice water until chilled; drain.

    2. Stir together vermouth (if desired) and next seven ingredients in a medium bowl. Add shrimp, tossing gently. Spoon ½ cup shrimp mixture into each of 4 martini glasses. Garnish, if desired.

      Makes 4 servings.
