Shrimp Martini Cocktail Appetizer

List of Ingredients
- ½ pound medium shrimp, peeled
- 1 to 2 Tbsp dry vermouth (optional)
- 1 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- 2 plum tomatoes, seeded and chopped
- 8 pimiento-stuffed Spanish olives, coarsely chopped
- 1 small jalapeño pepper, seeded and minced
- 1 large clove garlic, minced
- Garnishes: Lemon zest curls, skewered olives
Instructions
- Cook shrimp in boiling water 1 minute, or just until shrimp turn pink. Drain and plunge into ice water until chilled; drain.
- Stir together vermouth (if desired) and next seven ingredients in a medium bowl. Add shrimp, tossing gently. Spoon ½ cup shrimp mixture into each of 4 martini glasses. Garnish, if desired.
Makes 4 servings.
