Skewered Buffalo Chicken Tenders with Blue Cheese Sauce

"Let's take a trip to Buffalo, New York, home of those spicy-hot chicken wings. Here, the same great flavors we all know and love come in my version of these no-mess, no-fuss, easy-to-serve appetizers. First, they're made with boneless chicken tenders. And second, they offer that great spicy, blue cheese flavor—all handed to your guests on a skewer. It's great party food done with absolute ease. You can use either metal or bamboo skewers. If using bamboo skewers, be sure to soak them in water for 15 minutes before putting the chicken on them so they don't go up in smoke."

Chicken Skewers:
â—¦ ½ cup all-purpose flour
â—¦ ½ cup plain bread crumbs
â—¦ Pinch of garlic powder
â—¦ Pinch of paprika
â—¦ ½ teaspoon kosher salt
â—¦ ½ teaspoon coarsely ground black pepper
â—¦ 2 large eggs, lightly beaten
â—¦ 1 pound chicken tenders or 4 boneless, skinless chicken breasts, cut into ½-inch strips
Buffalo Hot Sauce:
â—¦ ¾ cup hot sauce
â—¦ 5 tablespoons unsalted butter
â—¦ 1 teaspoon minced garlic
â—¦ 1 to 2 cups bottled blue cheese dressing
â—¦ 3 celery stalks, cut into 3-inch pieces
Recipe
Preheat the oven to 350° F. Line a baking sheet with aluminum foil and spray with the vegetable oil spray.
To make the chicken skewers, combine the flour, bread crumbs, garlic powder, paprika, salt, and pepper in a resealable plastic bag. Close the bag and shake thoroughly. Place the beaten eggs in a shallow bowl. Dip the chicken tenders into the egg, shaking off any extra. Put the chicken tenders into the flour mixture, close the bag, and shake thoroughly to coat.
Thread the chicken onto the skewers. Arrange the skewers in a single layer on the prepared baking sheet. Bake for 7 to 8 minutes, then turn the skewers over and bake for 7 to 8 minutes more.
To make the sauce, while the chicken is cooking, combine the hot sauce, butter, and garlic, in a saucepan over medium heat. Stir well.
Remove the baking sheet from the oven. Brush both sides of the chicken with the Buffalo hot sauce. Return the chicken to the oven and bake for 3 minutes more. Serve with the blue cheese dressing and celery sticks.
