    Smoked Salmon and Onion Cheesecake

    List of Ingredients


    • 1/4 cup grated Parmesan cheese, divided
    • 2 Tbsp fine, dry breadcrumbs (store-bought)
    • 1 small Vidalia or other sweet onion, chopped
    • 1 cup chopped green bell pepper
    • 3 Tbsp butter, melted
    • 3 (8-ounce) packages cream cheese, softened
    • 1/3 cup evaporated milk
    • 4 large eggs
    • 1/4 tsp salt
    • 1/4 tsp freshly ground black pepper
    • 1/2 pound smoked salmon, finely chopped
    • 1/2 cup (2 ounces) shredded Swiss cheese


    Instructions


    1. Combine 2 tablespoons Parmesan cheese and breadcrumbs. Sprinkle crumb mixture evenly in bottom and up sides of a buttered 8-inch springform pan; set aside. Cook onion and bell pepper in butter in a skillet over medium heat 3 minutes or just until tender, stirring occasionally. Set aside.

    2. Combine cream cheese, milk, and eggs in a large mixing bowl; beat at medium speed with an electric mixer until smooth. Stir in onion mixture, salt, and ground pepper; fold in salmon and Swiss cheese. Pour mixture into prepared pan.

    3. Bake, uncovered, at 300 degrees for 1 hour and 40 minutes or until center is almost set. Turn oven off. Leave cheesecake in oven 1 hour. Remove from oven, and cool to room temperature on a wire rack; sprinkle top with remaining 2 tablespoons Parmesan cheese. Carefully remove sides of springform pan. Serve at room temperature, or cover and chill.

      Makes 16 servings.



    Final Comments


    A wedge of this rich salmon cheesecake and a fresh green salad make memorable luncheon fare. If you prefer, serve in small wedges as a plated appetizer.
