Southwest Spicy Drumsticks

List of Ingredients
- 12 chicken drumsticks
- 2 Tbsp chili powder
- 2 Tbsp cumin powder
- 1 Tbsp vegetable oil
- 1 medium onion, quartered and separated
- 4 ounces chipotle in adobe chili pepper
- 3 serrano chili peppers
- 3 garlic cloves
- 6 ounces fresh orange juice
- Chopped cilantro to taste
- 1 cup plain yogurt

- Hot, cooked rice
Instructions
- Preheat oven to 400 degrees (F). Coat drumsticks with chili powder and cumin. Place in skillet with oil and onion. Brown lightly, being careful not to burn spices. Add chipotle, serrano, garlic, and orange juice.
- Place everything into an ovenproof dish and bake until tender, about 45 minutes. Remove drumsticks to platter. Strain sauce remaining in dish and place in saucepan. Heat until warm. Remove from heat and add cilantro and yogurt, off heat to avoid yogurt separating. Pour over drumsticks.
- Serve with rice and lots of sauce.
Makes 6 servings (2 drumsticks each).
