Spiced Green Olives

Variation of a recipe from "Food for Friends"
List of Ingredients
- 1/2 lb. green olives
- 5 small cloves garlic, slightly crushed
- 2 dried red chilies
- 1/2 tsp cumin seeds, crushed
- 1/2 tsp coriander seeds, crushed
- Three 1-inch strips lemon peel
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
Instructions
- Combine olives, garlic, chilies, cumin seeds, coriander seeds and lemon peel.
- Whisk the olive oil and lemon juice together and pour over olives; toss, cover with plastic wrap, refrigerate and marinate 24 to 48 hours, tossing occasionally.
- Remove garlic, chilies and lemon peel. Bring olives to room temperature before serving.
Makes 10 appetizer servings.
