    Spiced Green Olives

    Variation of a recipe from "Food for Friends"


    List of Ingredients


    • 1/2 lb. green olives
    • 5 small cloves garlic, slightly crushed
    • 2 dried red chilies
    • 1/2 tsp cumin seeds, crushed
    • 1/2 tsp coriander seeds, crushed
    • Three 1-inch strips lemon peel
    • 2 Tbsp olive oil
    • 1 Tbsp lemon juice


    Instructions


    1. Combine olives, garlic, chilies, cumin seeds, coriander seeds and lemon peel.

    2. Whisk the olive oil and lemon juice together and pour over olives; toss, cover with plastic wrap, refrigerate and marinate 24 to 48 hours, tossing occasionally.

    3. Remove garlic, chilies and lemon peel. Bring olives to room temperature before serving.

      Makes 10 appetizer servings.
