Spicy Lime Chicken Drumettes with Guacamole-Salsa Dipping Sauce

- 2 limes
- 2 medium cloves garlic, peeled and forced through a press or very finely minced
- 1 tsp chili powder
- 1 tsp paprika
- 2 tsp sugar
- 20 chicken drumettes (about 2-1/2 lbs.)
- Nonstick cooking spray
- 1/4 tsp salt

- 3/4 cup prepared guacamole (8-ounce container)
- 1/2 cup salsa
Instructions
- To prepare the chicken: Remove the peel and white pith from the limes and chop the flesh coarsely. In a bowl, combine the lime with the garlic, chili powder, paprika and sugar. Put the chicken into a glass dish and coat with the lime mixture. Cover and refrigerate at least 2 hours, turning once.
- To prepare the dipping sauce: Combine the guacamole and salsa. Refrigerate until ready to use.
- Heat oven to 375 degrees (F). Spray the top of a broiling pan with cooking spray and line the bottom with aluminum foil. Lay the chicken on top; don't scrape off the marinade. Bake 20 minutes. Turn the chicken, brushing with the marinade. Continue baking 15 minutes, or until cooked through. (Discard the remaining marinade.)
- Finish the chicken by putting under a hot broiler about 4 inches from the heat. Broil a few minutes until browned. Serve hot or at room temperature.
Serve with a bowl of the dipping sauce on the side.
Makes 20 drumettes.
