    Stacked Caviar Dip

    Source of Recipe

    From "Colorado Colore"

    List of Ingredients

    • 6 hard-cooked eggs, finely chopped
    • 3 Tbsp mayonnaise
    • 3/4 cup chopped red onion
    • 8 ounces cream cheese, softened
    • 2/3 cup sour cream
    • 2 Tbsp drained rinsed capers
    • 1 (4-ounce) jar lumpfish red or black caviar
    • Lemon wedges
    • Snipped fresh parsley

    Instructions

    1. Combine the eggs and mayonnaise in a bowl and mix well. Spread the egg mixture over the bottom of a greased 8-inch springform pan. Sprinkle with the onion.

    2. Beat the cream cheese and sour cream in a mixing bowl until smooth. Spread the cream cheese mixture over the prepared layers. Chill, covered, for 3 to 10 hours.

    3. Remove the sides of the pan just before serving. Mound the capers in a circle in the center of the chilled layers. Spread the caviar evenly around the capers. Garnish with lemon wedges, parsley and/or capers.

Serve with assorted party crackers, thin baguette slices, toast points and/or slices of cold baked potatoes.

      Serves 10
