Stacked Caviar Dip

List of Ingredients
- 6 hard-cooked eggs, finely chopped
- 3 Tbsp mayonnaise
- 3/4 cup chopped red onion
- 8 ounces cream cheese, softened
- 2/3 cup sour cream
- 2 Tbsp drained rinsed capers
- 1 (4-ounce) jar lumpfish red or black caviar
- Lemon wedges
- Snipped fresh parsley
Instructions
- Combine the eggs and mayonnaise in a bowl and mix well. Spread the egg mixture over the bottom of a greased 8-inch springform pan. Sprinkle with the onion.
- Beat the cream cheese and sour cream in a mixing bowl until smooth. Spread the cream cheese mixture over the prepared layers. Chill, covered, for 3 to 10 hours.
- Remove the sides of the pan just before serving. Mound the capers in a circle in the center of the chilled layers. Spread the caviar evenly around the capers. Garnish with lemon wedges, parsley and/or capers.
Serve with assorted party crackers, thin baguette slices, toast points and/or slices of cold baked potatoes.
