    Stilton, Bacon and Mushroom Spread

    • 6 slices bacon
    • 1 Tbsp oil
    • 1 medium onion, chopped
    • 1 pound small white button mushrooms, cut in half
    • 4 ounces Stilton cheese, roughly chopped
    • 1 (8-ounce) package cream cheese
    • 2 to 3 Tbsp milk
    • ¼ tsp black pepper, or to taste
    • 2 Tbsp snipped chives
    • 1 tsp paprika
    • 4 Tbsp fresh bread crumbs
    • .
    • Toasted rounds of French bread, for serving (optional)


    Instructions


    1. Preheat oven to 375° F.
      Cook bacon until crisp. Drain off and discard fat; crumble bacon and set aside. In oil, sauté onions and mushrooms. When browned, mix in bacon, then divide mixture among 4 baking ramekins.

    2. Beat together Stilton cheese, cream cheese, and milk until smooth. Stir in black pepper. Add chives, reserving a few for garnish.

    3. Spoon cheese mixture over onion and mushroom mixture in ramekins. Toss breadcrumbs with paprika and sprinkle over top of cheese mixture. Bake in oven 20 minutes, or until tops are browned and mixture bubbles. Serve hot spread with small slices of toasted French bread, if desired.

      Makes 4 servings.
