Texas Flamethrowers with Dipping Sauce

- 4 Anaheim chile peppers -- roasted, peeled, quartered lengthwise and seeded
- 1 egg, beaten
- 1/4 cup milk
- 1 cup all-purpose flour
- Dash of salt
- Dash of black pepper
- Cooking oil

- -- Dipping Sauce --
- 4 green jalapenos -- roasted, peeled, seeded and minced
- 1 cup buttermilk
- 1/4 cup mayonnaise
- 1 Tbsp minced garlic
- 2 tsp minced fresh chives
- 1 tsp minced fresh thyme leaves
- 1/2 tsp salt
- 1/2 tsp cider vinegar
- 1/4 tsp dry mustard
- 1/4 tsp black pepper
Instructions
- In a medium-sized bowl, combine eggs and milk thoroughly. Soak peppers in egg/milk bath for about 5 minutes, then remove the peppers. Sprinkle peppers with salt and black pepper.
- Dredge peppers in flour and fry in hot oil until batter is crisp.
- For Dipping Sauce: Blend all ingredients together in a food processor.
Serve flamethrowers with dipping sauce.
