The Outrageous Onion

List of Ingredients
- 1 very large (preferably sweet) onion, peeled
- .
- -- Onion Flour --
- 2 cups flour
- 1 Tbsp paprika
- 2 Tbsp Lawry's seasoned salt
- 1 Tbsp pepper (white preferred)
- 2 Tbsp onion powder
- 1 Tbsp cayenne
- 1 Tbsp garlic salt
- 1 tsp sugar
- Sprinkle of dried basil
- .
- Egg wash made with 4 eggs and 2 cups flour (or scale down)
- Oil for deep-frying
Instructions
- Slice the top off of the peeled onion, leaving root intact. Cut down through the onion in half-inch crossing pattern. Place in ice-water bath for 24 hours or overnight. Drain.
- Dredge onion with onion flour. Coat with the egg wash. Dredge onion thoroughly again in onion flour.
- Place onion in a deep-fryer, bottom side up, for 4 minutes or until golden brown; turn over and fry for another 2 to 3 minutes. Drain upside down for 1 minute. Cool slightly. Remove onion core with corer or sharp paring knife.
Garnish with kale and serve with barbecue sauce.
