    Tomatillo Guacamole

    List of Ingredients

    â—¦ 6 tomatillos (about 12 ounces), husks removed, rinsed, and halved
    â—¦ ½ jalapeño chile (ribs and seeds removed for less heat, if desired)
    â—¦ ¼ cup finely chopped white onion
    â—¦ 2 tablespoons finely chopped fresh cilantro
    â—¦ Coarse salt
    â—¦ 1 ripe avocado, halved lengthwise, pitted, peeled, and coarsely chopped

    Recipe

    Purée tomatillos, jalapeño, onion, cilantro, and ¾ teaspoon salt in a food processor or blender until smooth. Reserve ½ cup salsa mixture in food processor; transfer remaining salsa to a serving dish.

    Add avocado to blender and purée until smooth.
    Season with more salt as desired. Serve immediately, with salsa alongside.

    Makes 1 cup
