    Tomato Bruschetta

    Recipe Introduction

    "Sometimes the most basic of ingredients make the most delicious dishes of all. Of course, to make this dish really shine, seek out the best quality bread, tomatoes, and olive oil you can find. Serve as the first course to a summery, grilled meal."

    List of Ingredients

    â—¦ 1 cup (6 ounces) cherry tomatoes, halved
    â—¦ ¼ cup fresh basil, sliced
    â—¦ Extra-virgin olive oil, kosher salt, and freshly ground pepper
    â—¦ Pain au levain

    Recipe

    In a bowl, mix the tomatoes and basil, and sprinkle generously with oil, salt, and pepper. Cut the bread into six slices, each ½ inch thick.

    Heat a heavy grill pan, preferably cast iron, over medium-high heat. Brush the bread with oil and grill, turning once, until toasted on both sides, about 2 minutes.

    Transfer the grilled bread slices to a serving platter.
    Mound the tomato salad on top and serve at once.

    Makes 4 to 6 servings
