    Wyoming Spread Hot Spinach Dip

    List of Ingredients


    • 2 Tbsp pure olive oil
    • 1/2 tsp dried basil leaves
    • 1/2 tsp dried thyme leaves
    • Salt and pepper to taste
    • 1/2 cup minced shallots
    • 2 Tbsp minced garlic
    • 2 bunches fresh spinach, chopped
    • 1 (8-ounce) pkg. light cream cheese, softened to room temperature
    • 3/4 cup lowfat ricotta cheese
    • 1 cup tomatoes, peeled, seeded and chopped
    • Parmesan cheese
    • .
    • Toast wedges or crackers


    Instructions


    1. Preheat oven to 350 degrees (F). Heat oil in a skillet. Add basil, thyme, salt and pepper, and stir to infuse these flavors in the oil. Saute shallots and garlic for 30 seconds. Add spinach and cook until leaves are wilted, about 5 minutes. Remove from heat.

    2. Beat cream cheese and ricotta together, then fold into the spinach mixture. Adjust seasoning, if needed. Spread into a 9-inch ovenproof dish.

    3. Bake for 20 minutes. Top with tomatoes and Parmesan. Bake for 5 more minutes.

      Serve with toast wedges or crackers.

      Makes 20 servings.
