    "Bring Home the Bacon" Tomatoes

    Recipe Introduction

    "One bite and these appetizers will fly off your party tray. It's a version of the famous BLT sandwich that is stuffed in a tomato shell."

    List of Ingredients

    • 15 large cherry tomatoes (not grape tomatoes)
    • ¼ tsp garlic salt
    • 8 bacon slices
    • 2 Tbsp thinly sliced green onions, white parts only
    • 2 Tbsp dry plain breadcrumbs
    • ¼ cup finely chopped iceberg lettuce
    • 3 Tbsp mayonnaise
    • â…› tsp black pepper

    Recipe

    Cut a thin slice off the bottom of each tomato so it will set level. Cut a ¼-inch slice from the stem end of each tomato. With a melon baller or a small spoon, scoop out the seeds and pulp and discard.

    Sprinkle the inside of each tomato lightly with the salt. Invert on layers of paper towels to drain. Let drain 15 minutes. Meanwhile, in a large skillet over medium heat, fry the bacon until crisp, around 8 minutes. Drain on paper towels and crumble when cool enough to handle.

    In a medium bowl, combine the onions, breadcrumbs, lettuce, mayonnaise, and pepper. Stir in the bacon crumbles. Spoon the mixture into the tomatoes. Refrigerate until ready to serve.

    Makes 6 to 8 servings
