    "The Pig Skin" Deviled Eggs

    Recipe Introduction

    "Eggs and bacon, or bacon and eggs. Either way you say it, there's no doubt that this is one delectable combo. I like to capture the game-day spirit by adding crispy pork crackling on top."

    List of Ingredients

    â—¦ 1 dozen hard-cooked eggs, peeled
    â—¦ ½ cup light mayonnaise
    â—¦ 1 tablespoon finely chopped scallion
    â—¦ 3 tablespoons sweet pickle relish
    â—¦ 2 tablespoons sour cream
    â—¦ 1 teaspoon spicy brown mustard
    â—¦ 1 teaspoon Sriracha chili sauce
    â—¦ â…› teaspoon salt
    â—¦ Toppings: pickled okra slices, chopped pork crackling strips, chopped fresh parsley

    Recipe

    Halve the eggs lengthwise, and carefully remove the yolks, keeping the egg whites intact.

    Mash together the yolks, mayonnaise, and next 6 ingredients until smooth, using a fork. Spoon the yolk mixture into the egg white halves. Top with the pickled okra slices, the chopped pork crackling strips, and parsley.

    Cover and chill one hour before serving.

    Makes 2 dozen
