Blues Burgers

List of Ingredients
- ¼ cup butter
- ½ pound white button mushrooms
- 1 yellow onion, sliced into rings
- 2 Tbsp barbecue dry rub (purchased or homemade)
- 2 ounces blue cheese, crumbled
- 1½ pounds ground beef or chuck
- 1 cup purchased barbecue sauce
- 4 hamburger buns or onion rolls, toasted
Instructions
- Build a fire in the charcoal grill.
Melt the butter in a saucepan over medium heat. Add the mushrooms and onion rings and saute until soft. Transfer to a warmed platter and set aside. Mix together the rub and blue cheese in a small bowl.
- Form the ground beef into 8 patties. Top four of the patties with equal amounts of the blue-cheese mixture. Top with the remaining four patties and pinch to seal the edges.
- Place directly over the hot coals and cook to sear and brown, about 3 minutes per side. Then continue grilling to the desired doneness, 10 to 12 minutes for medium-rare, basting with the barbecue sauce during the last couple of minutes of grilling time. Remove from the heat and top with the mushrooms and onions. Serve on the toasted buns.
