Char-Grilled Butterflied Shrimp

List of Ingredients
- 16 jumbo raw shrimp, shell on, heads removed
- Finely grated zest and juice of 2 limes
- 2 large red chiles, seeded and finely diced
- 2 tsp grated fresh ginger root
- 4 cloves garlic, finely chopped
- 4 Tbsp extra-virgin olive oil
- Salt and freshly ground black pepper
Instructions
- Cut the shrimp along the back. Turn them over, open them out and press flat. Remove the intestinal tract. The shrimp are now butterflied.
- Arrange the shrimp, cut-side up, on a sheet. In a bowl, combine the lime zest and juice, chile, ginger, garlic, and some salt and pepper. Drizzle with the oil, cover and allow to marinate in the refrigerator for 30 minutes.
- Cook on a hot grill for 2 to 3 minutes shell-side down, until the shells are deep pink in color, then turn and cook on the flesh side for 30 seconds. Serve at once.
