    Char-Grilled Butterflied Shrimp

    List of Ingredients


    • 16 jumbo raw shrimp, shell on, heads removed
    • Finely grated zest and juice of 2 limes
    • 2 large red chiles, seeded and finely diced
    • 2 tsp grated fresh ginger root
    • 4 cloves garlic, finely chopped
    • 4 Tbsp extra-virgin olive oil
    • Salt and freshly ground black pepper


    Instructions


    1. Cut the shrimp along the back. Turn them over, open them out and press flat. Remove the intestinal tract. The shrimp are now butterflied.

    2. Arrange the shrimp, cut-side up, on a sheet. In a bowl, combine the lime zest and juice, chile, ginger, garlic, and some salt and pepper. Drizzle with the oil, cover and allow to marinate in the refrigerator for 30 minutes.

    3. Cook on a hot grill for 2 to 3 minutes shell-side down, until the shells are deep pink in color, then turn and cook on the flesh side for 30 seconds. Serve at once.

      Serves 4
