Source of Recipe
From "Taming the Flame" by Elizabeth Karmel
List of Ingredients
- 2 Tbsp smoked paprika
- 2 Tbsp kosher salt
- 3 Tbsp granulated sugar
- 2 Tbsp brown sugar
- 1 Tbsp ground cumin
- 1 Tbsp chili powder
- 1 Tbsp freshly ground black pepper
- ½ Tbsp cayenne pepper
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 Tbsp celery salt
- 1 tsp oregano, crushed
Instructions
- Combine the smoked paprika, salt, granulated sugar, brown sugar, cumin, chili powder, black pepper, cayenne, onion powder, garlic powder, celery salt and oregano in a medium bowl and mix well. For a smoother rub, process the ingredients in a spice grinder until well combined and all pieces are uniform (the rub will be very fine and tan in color).
Use to rub on meat before grilling. Store extra rub in an an airtight container for up to 6 months.
Makes about 1 cup.
Final Comments
This rub has all the classic barbecue notes: salt, spice, sweet and smoke. It is particularly great on ribs, but it works with pork chops and tenderloin, chicken, and even catfish.
