Divine Halibut Burgers

List of Ingredients
- 1 Tbsp virgin olive oil
- 2 cloves garlic, minced
- 1/8 tsp kosher or sea salt
- 1/2 tsp freshly ground black pepper
- 2 tsp balsamic or wine vinegar
- 1-1/2 lbs. halibut fillet
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 to 4 Tbsp pickle relish (any kind)
- 1 to 2 tsp capers, drained
- 1 to 2 tsp green peppercorns, drained
- 1 red onion, finely chopped
- 4 onion hamburger buns, toasted
Instructions
- Combine oil, garlic, salt, pepper and vinegar in a shallow bowl, stir gently and place halibut in this marinade for at least 30 minutes or all day (cover fish with waxed paper and chill in refrigerator while marinating).
- Combine sour cream, mayonnaise, pickle relish, capers, green peppercorns and onion, and stir well. If made ahead, cover sauce and refrigerate.
- Start coals. When coals are medium hot, grill fish, allowing 8 to 10 minutes per side, per inch of thickness. Place fish on a piece of foil, cover tightly with foil and let sit for 10 minutes.
Slather toasted buns with sauce and add portions of fish.
