Grilled Lobster Tails with Garlic Butter

- 2 petite lobster tails, thawed
- 2 Tbsp butter, melted
- 1 clove garlic, pressed
- Dash paprika, optional
- Dash crushed red pepper, optional
- Pinch white pepper, optional
- Pinch tarragon or herb medley, optional
- 1/2 tsp minced parsley
- 2 lemon wedges
Instructions
- Thaw lobster tails (but do not let them get warm!).
- Remove thin underbelly along each side of the hard upper shell with kitchen shears.
- Heat grill. Combine butter with garlic, paprika, peppers and herbs. Taste and adjust as desired.
- Grill lobster tails over medium coals, brushing with the seasoned butter until just done, approximately 6 to 10 minutes; do not overcook.
- Transfer to serving plates; sprinkle with fresh parsley and garnish with lemon wedges.
Serves 2, with steaks.
