    Grilled Rib Eye Steak

    Recipe Introduction

    "You can make an equally excellent steak on either a charcoal or a gas grill. Cook these steaks to your preferred level of doneness: mine is medium-rare. You can tell the steak is at that temperature when you press on it and it feels like pressing on the meaty part of your forearm near the elbow. A little chef's secret for you!"

    List of Ingredients

    â—¦ 6 rib-eye steaks, 1 ½ inches thick
    â—¦ Salt
    â—¦ Freshly ground black pepper
    â—¦ 2 tablespoons olive oil

    For the Seasoned Butter:
    â—¦ ½ cup (1 stick) butter, diced
    â—¦ Leaves from 2 sprigs fresh tarragon, chopped
    â—¦ Leaves from 3 sprigs fresh parsley, chopped
    â—¦ 1 tablespoon minced shallot
    â—¦ 1 tablespoon lemon juice
    â—¦ 1 clove garlic, minced
    â—¦ ½ teaspoon Worcestershire sauce
    â—¦ 1 dash Tabasco
    â—¦ Salt
    â—¦ Crushed black pepper

    Recipe

    Preheat one side of a gas grill to high and the other to medium. Or build a large fire in a charcoal grill and arrange the coals so that you have a hot side and a cooler side.

    Season the steaks liberally with salt and black pepper, then rub in the olive oil. Put the steaks on the grill and cook for 10 to 12 minutes, until both sides are a rich mahogany brown. Transfer to the cooler part of the grill to cook for another 5 minutes.

    For the seasoned butter, combine all of the ingredients in a food processor or blender. Purée until well mixed. To serve the steaks, transfer to a large platter and top each steak with a heaping teaspoon of the seasoned butter which will slowly melt over the steaks.

    Serves 6
